PUPDATE 2
Dutch continues to be a sweetheart. People who meet her often comment on her friendly temperament and good looks. She is a quick learner and has made great strides in training the last couple weeks. For instance, she is much more comfortable going potty on leash and has had no more accidents in the house. We now consider her potty trained and a possible good fit for someone living in an apartment. She does not frequently bark indoors (or much at all, really). Dutch has now met quite a few dogs on our walks and all meetings have gone exceedingly well.

We continue to work with Dutch to ‘Leave it’ on walks when she is distracted, and not to jump up in greetings, both of which she is getting much better at.
Dutch wakes up and realizes that she's the sweetest girl in the world. Then she goes for a walk, eats breakfast, and settles into being a big, cute sweetheart who happily soaks up all the attention one can give. When she's not on walks or otherwise participating in daily activities, she's happy entertaining herself in her crate or dog bed with a chew toy nearby for occasional mental stimulation.
Dutch loves the people. She desires to greet the world with paws wide open. We're working with her to constrain her enthusiasm for the sake of those who are unprepared to be hugged-and-kissed-on-sight. Dutch has had no exposure to children in our home.
Dutch's current routine involves 3 solid walks a day with some shorter outings in between. She has fairly good leash manners, and is being trained to 'leave it' for distractions (like far away dogs, humans, or prey) that cause her to stand still and alert. Her energy is medium-high when working/playing and medium-low when we're working or going about normal, daily tasks. She would enjoy a securely fenced outdoor area for occasional higher energy play. We think she will need an owner who can continue to provide a structured environment while rewarding good behavior.
In our limited experience, she has done well with other dogs. She is fairly submissive, yet playful. She has not had exposure to cats in our time with her.
When we go away for a short time, Dutch stays in her crate, where she settles quickly and does fine until we return.
Dutch was positive for Anaplasmosis, a tick-borne disease, in April but is not showing any clinical signs. A positive result for Anaplasmosis just indicates antibodies to this bacteria, not necessarily active infection. Per our rescue protocol, she is currently being given a round of antibiotics.
We are working with Dutch to become comfortable going potty on-leash (she has had accidents inside while sorting this out), and she loves the praise and treats she receives when she is successful!
